Ingredients
  • 1 cup quinoa, well rinsed
  • 1 1/2 cups vegetable broth, water, or coconut milk
  • 2 cups broccoli, chopped
  • 1 cup cheddar, shredded
  • salt and pepper to taste

This is a great side dish to compliment any meal or just have it as a light lunch.

For dairy allergies omit the cheese. This recipe will still taste good if you use coconut milk which adds a nice flavor, and sprinkle a little cinnamon. This will taste like a healthy dessert!

Directions:

1. Bring the quinoa and broth to a boil over medium heat, reduce the heat and simmer covered until the broth has been absorbed.
2. I like to cook my broccoli separately whether using frozen or fresh. Then I chop it and add it to the finished quinoa in the pot.
3. Stir in the cheese to melt.
4. Season with salt and pepper to taste.
5. Garnish with a couple of broccoli spears.
